How to make a delicious cake from small and sour apples

This year is a really good year for apples. Many people keep apple trees in their gardens because of the wonderful flowers that the tree has in spring but they never really use the apples.

People think often that the apples of their own trees are too sour, too hard, too small or have too many worms. Don't discard those apples! Those are the best apples for a cake. Large sweet supermarket apples are OK for raw consumption but don't make a very good cake. Here is how to make a delicious apple cake.

Apple preparation (common part for all recipes)

Wash the apples and cut out the apple core, cut away any areas where the apple was damaged (worm damage, brown spots because it fell to the ground, apple damaged by birds, etc ...).

Pre-cook the apples with a very small amount of water in a pan for a few minutes. We add the water just to generate steam. 3-5mm water at the bottom of the pan is enough. This will make the apples more soft but do not make apple sauce by cooking them too long. To pre-cook the apples is especially recommended if you use apples which are almost stone hard.

Apple pie, recipe 1

You need:
400g Flower
Tsp backing powder
2 egs
20 ml Milk
150g Butter
70g Sugar

Icing Sugar
Ground cinnamon
Nesquik (powder for chocolate milk)
This is a classic apple pie with a dow cover.

Preparation of the dow:
400g Flower
Tsp backing powder
2 egs
20 ml Milk
150g Butter
70g Sugar

Mix the ingredients and roll out a thin dow. Use about 2/3 of the dow to line the cake pan and fill it then up-to the top with the pre-cooked apples.

Mix a tea spoon of ground cinnamon with 10 tea spoons of Nesquik (powder for chocolate milk) and distribute it evenly over the apples. If your apples are rather sour then add as well additional sugar.

Cover the apples with the remaining dow and sprinkle a bit of ground cinnamon, Nesquik and some white sugar on top.

Bake at 180'C (360'F) for about 30-45 min. Sprinkle a bit of white icing sugar powder on top.

Puff pastry filled with apples, recipe 2

You need:
Several sheets of frozen butter puff pastry

Raisins
Vanilla yogurt (at least 3% fat)
sugar

Defrost the frozen butter puff pastry in the microwave. Make some small pockets out of the puff pastry and fill them with pre-cooked apples, some raisins, a tea spoon of vanilla yogurt and some sugar.

Bake at 190'C (370'F) for about 30min until the puff pastry rose and is nice and fluffy.
